The "Tajarin" classics
Egg Tagliolini (Tajarin) are the result of a traditional recipe that requires a dough very rich in eggs, with a high proportion of this characteristic ingredient.
The entire manufacturing process is entirely artisanal, with many steps that, even today, are carried out manually by specialized personnel.
Instructions: Cook the tagliolini in plenty of boiling salted water for 4 minutes, with the lid closed. Drain the pasta while it is still hot and mix it in the same pan with butter.
SERVES 4 PEOPLE.
Store in a cool, dry place.
